Ice Cream Desserts

Chef Noel has prepared the perfect weekend indulgence for you to recreate at home. This wonderful trio ticks all the boxes; it's chocolatey, it's fruity and what compliments dessert perfectly - coffee! Follow the simple and fun steps below to make your own Knickerbocker Glory, Hot Fudge Sundae and Cafe Gourmand.

1) Knickerbocker Glory:

You will need: Vanilla ice cream, a selection of berries, meringue nests, whipped cream, 1 tin of strawberries, sprinkles and a tall glass.

Method: Begin by making a strawberry couli. Pour out half the syrup from the strawberrries. Place the remaining components of the tin in a liquidiser and blitz to a smooth sauce consistency. Be sure to store this in the fridge until you need it.

Build your dessert as follows: 

  • Place 1 scoop of ice cream in the glass.
  • Crush some meringue in your hand and drop on top of the ice cream.
  • Pour a little strawberry couli over.
  • Put in a layer of berries.
  • Repeat this process until you have 3 layers/3 scoops of ice cream in the glass.
  • Top it off with whipped cream and sprinkles.

2) Hot Fudge Sundae

You will need: Vanilla ice cream, whipped cream, chopped mixed nuts (toasted slightly), chocolate sauce (or follow the steps to make your own), butterscotch sauce (or follow the steps to make your own)

Method:

For the chocolate sauce: 250ml cream, 220g chocolate drops (55% if you can get it). Place chocolate drops in a bowl. Bring cream to the boil and then pour over chocolate until fully dissolved. Serve while warm. If you are unable to get chocolate drops then be sure to break chocolate into small pieces.

For the butterscotch sauce: 100g butter, 100g caster sugar, 100g brown sugar, 250ml cream, 1/4 lemon juice. Melt butter with brown sugar & caster sugar in a pan. Cook until the mix begins to caramelize and is rich brown in colour. Add the cream and continue cooking until all sugars are dissolved. Finish with lemon juice. Set aside to serve or store in the fridge and reheat in microwave when desired.

Build your dessert as follows: 

  • Place 1 scoop of ice cream in the glass.
  • Pour hot butterscotch sauce over it.
  • Add 2 more scoops of ice cream. 
  • Pour hot chocolate sauce over.
  • Top it off with whipped cream and chopped nuts.

3) Cafe Gourmand or Coffee with ice cream

You need: a coffee maker/nespresso machine.

Method: Simply add a scoop of ice cream to a shot of coffee. Serve with a biscuit of your choice.
